Shish Kabobs Moroccan Style (Known in France as “Les Brochettes.” By Executive Chef Said Benjelloun)

Yields: 4 servings


4 lbs leg of lamb or beef
1/4 t salt
1/2 C olive oil
1/4 C cilantro
1/4 C parsley
1 t garlic
1/2 C fresh onions, grated
1 t pepper
1 head of lettuce


  • Serve on a large plate with butter lettuce in the center, or as shish kabobs with Moroccan salad and warm bread. May also add olives.
