Pollo alla Capriccio

puff pastry dough
2 breasts of chicken
1 egg white
basil and Italian parsley, chopped
2 roasted red bell peppers
provolone cheese
fresh ground pepper

To Finish

  • Place one chicken breast on one layer of pastry.
  • Top the chicken with basil, parsley, spinach and a layer of provolone cheese.
  • Add roasted red bell peppers, another layer of cheese, spinach, basil and parsley.
  • Top with the second chicken breast.
  • Enclose the entire entrĂ©e with the second layer of puff pastry.
  • Pinch seal the edges of the product.
  • Brush with egg white.
  • Create steam-venting holes on the top by piercing the assembly with a toothpick.
  • Bake approximately 25 minutes at 350 degrees until golden brown.
  • As a suggested garnish, use rosemary sprigs, bundled carrots/ asparagus/bell peppers tied with chives and serve over a tomato rosemary sauce.
