TOWER OF FILET MIGNON WITH SAUTÉED CACTUS IN CHILE PASILLA SAUCE

INGREDIENTS

4 8-oz filet mignon, each sliced in 3 equal slices
1 lb mixed baby vegetables
2 oz butter, unsalted
2 lbs cleaned cactus leaves
to taste salt and pepper
1 C corn oil

METHOD

  • Sauté onions and garlic in corn oil until translucent.
  • Clean the black chile Pasilla, taking out the seeds; add into the pan and cook.
  • Add tomatoes and tomatillos, salt and pepper to taste and simmer 20 minutes.
  • Blend sauce and run through a China cap.
  • Sauté the cactus leaves in oil until tender.
  • Salt and pepper the filet slices and sauté to taste in butter.
  • Tier filet slices and cactus leaves to create a tower.
  • Steam the baby fresh vegetables and reserve.
  • Dress the tower in a plate with the sauce and arrange the baby vegetables.
