Poached pears in red wine


Ingredients: pears

15 peeled pears
2 bottles red wine (3L)
600g brown sugar
1 vanilla pod
1 cinnamon stick
1 teaspoon allspice
5 cloves


  • Make a single syrup with the above.
  • When syrup is boiling, put in peeled pears, until cooked.
  • Reduce syrup to a glaze.
  • When pears have cooled, pipe in Ganache.
