BBQ Chicken Flat Bread

Ingredients:

1 packet Dry active yeast
3 cups Flour
1 tsp. Sugar
1 tsp. Salt
1 cup water
1 tbsp. Oil
Barbecue sauce, to taste
12 oz. Mozzarella
2 Chicken breasts
Cilantro, chopped, to taste
Red Onion, thinly sliced, to taste

Method:

• Preheat oven to 375°F. Mix packet of dry yeast with 2 tablespoons of warm water. Heat 1 cup water over low heat, adding 1 tablespoon of oil. Heat water no warmer than 110-115°F, using a food thermometer to determine the temperature.
• In a large bowl add 2 cups flour, salt and sugar, than mix in the heated water and oil mixture. Stir and add in the yeast mixture. Using a hand blender with dough beaters or food processor, slowly blend dough mixture.
• Slowly add in remaining flour, blend a few more minutes and keep on adding a bit of flour at a time until dough is not sticking to side of bowl. Roll dough mixture in a ball, place in a oiled bowl with a lightly damp towel, and let sit for 10 minutes. Divide dough ball in half. Flatten each half over lightly oiled sheet pans.
• Lightly rub a couple tablespoons of oil over flattened pizza dough. Spread 3/4 cup plus of barbecue sauce over dough, shredded or cubed cooked chicken breast, and mozzarella cheese to taste. A dash of garlic powder if so desired. Bake in oven until golden brown, or about 15 minutes. Top with fresh chopped cilantro and shaved sweet red onion. Enjoy!
