Spinach Queso Dip

Yields: 4 servings

Ingredients:

2 tbsp. Butter
1/2 cup Yellow onions, finely diced
1.5 oz. Fresh jalapenos, diced
1/2 lb. Fresh tomatoes, diced
2, 7-oz. cans Macayo Diced green chiles, rinsed and drained
1 lb. frozen spinach mix, thawed and drained
8 oz. Velveeta cheese, cut into small cubes
4 oz. Cream cheese, cut into small cubes
1/4 cup Milk
Salt and ground pepper, to taste
Corn tortilla chips, as needed for dipping

Method:

• Melt butter in a medium saucepan. Add diced onions cook until softened and clear. Add diced jalapenos, diced tomatoes, thawed spinach and diced green chiles sauté approx 5 minutes or until tomatoes have softened. Add Velveeta cheese, cream cheese and milk stirring until cheeses are melted and a desired consistency is reached. Sprinkle salt and pepper to taste.
