Roasted Baby Beet Salad with Balsamic Shallot Vinaigrette

Balsamic Shallot Vinaigrette:

1 cup Balsamic vinegar
3/4 cup Shallots, minced
1/4 cup Honey
1 1/3 cup Extra virgin olive oil
Salt and pepper, to taste

Method:

• Combine all ingredients except oil, salt and pepper. When properly combined, slowly add oil to emulsify then salt and pepper to taste.
