Panko Crusted Soft Shell Crabs

Ingredients for Panko Crusted Soft Shell Crabs

4 Soft Shell crabs (cleaned)
Salt, Pepper

Whole Egg, beaten
Panko Bread Crumbs
Clarified Butter

Ingredients for Jalapeño Remoulade Sauce

½ cup mayonnaise
2 Tbs diced onion or shallot
1-2 Tbs ketchup
1 Tbs Old Bay Seasoning
1 Tsp horseradish
½ Tsp+ chopped Jalapeño pepper

Method for Panko Crusted Soft Shell Crabs

• Season crabs with salt and pepper. Dredge in flour.
• Shake off excess and dip into egg, then into panko breading shaking off excess breading.
• Immediately place in frying pan with clarified butter (medium-high heat) top side of crab down in pan.
• Reduce heat to medium. Pan fry 2 minutes at medium heat.
• Turn over and pan fry other side 2 additional minutes
• Place over Remoulade Sauce on place and serve immediately.

Method for Jalapeño Remoulade Sauce

• Mix ingredients, adjusting seasoning to personal preference.
• Place in refrigerator for 1 hour for flavors to blend.
