Blueberry Bread Pudding

Serves 7

Ingredients for Blueberry Bread Pudding

3 loaves French Batard Bread
1½ qts Heavy Cream
1 qt Half-Half
4 large Eggs
1½ cups White Sugar
2 tbsp Vanilla Extract
½ tbsp Nutmeg
1 tbsp Cinnamon
3 pints Blueberries
1½ cups White Chocolate Chips

Method for Blueberry Bread Pudding

• Cut bread into cubes.
• Mix eggs, sugar, vanilla, nutmeg and cinnamon together until all the sugar lumps are dissolved.
• Then add the creams and mix well.
• Pour the mixture over the bread and mix together.
• Make sure the cream mixture is soaked into the bread.
• Add the berries and chocolate and mix well until all is blended evenly.
• Spray an oven safe dish with non-stick pan spray and pour the pudding into the dish and spread out evenly.
• Bake in oven at 300° for 50 minutes.
• Check your pudding with a toothpick to see if it’s ready to be served. If the toothpick comes out wet, bake for another 10 minutes.
