Yields: (1) 8” Pie


8 oz sweetened condensed milk
2 key limes, zest of
4 oz key lime juice
3 each egg yolks
2 C heavy cream
1/4 C sugar
1 graham cracker pie shell 8”


  • Pre-bake pie crust in a 325-degree oven for 8-10 minutes until golden brown. Remove and cool.
  • Place condensed milk, lime juice, lime zest and egg yolk in a bowl or electric mixer and whisk for 8 minutes so that all ingredients are thoroughly combined.
  • Pour mixture into pie shell and bake at 325 degrees for 15-20 minutes until custard sets. Remove and chill.
  • Whip heavy cream and sugar until stiff. Spread evenly over pie.
  • Garnish with Key Lime slices and mint.
