Executive Chef Paul Ringelstetter
After serving four years in the Marine Corps Paul returned to his native Texas to attend The University of Texas, but after only a few semesters he realized that his true passion was cooking. He quickly left U.T. and went on to graduate with honors from The Texas Culinary Academy. He then began working under Chef John Maxwell at The Mansion at Judges’ Hill. After working his way up to Sous Chef, he became the Executive Chef when Chef Maxwell left in 2004. After a year as the Chef at The Mansion, Paul moved to France with his fiancé to hone his culinary skills. In September 2006, he returned to Austin and was hired to open the new Georgetown Romeo’s.
