Ingredients for Beef Wellingtons

2 lb Beef Tips, 1/4” cubes
1 lb Pate (your favorite kind), portion into even amounts
4 oz Demi-glace
2 sheet Puff Pastry
Salt & Pepper, to taste
1 Egg Yolk

Method for Beef Wellingtons

• Preheat oven to 350 degrees.
• Thaw out the pastry sheets and roll out to about 1/4 in thick, using flour to avoid sticking to the surface. Place one sheet down on table and reserve the other to place on top of the filling.
• Place the pate onto the puff pastry sheet, (making about 8-10 different little piles. Your goal is to have the finished product into even little squares).
• Place the cubed beef on top of the pate. Season with salt and pepper.
• Take the other rolled out piece of puff pastry and place on top. Crimp the sides around the individual pieces to hold them together.
• Cut them into 8-10 pieces depending on the size you make them. Brush them with the egg yolk very lightly. Place on a greased baking sheet leaving enough room for them to rise.
• Bake the wellingtons for about 20-30 minutes or until golden brown. Serve with a demi-glace sauce for dipping. (You may find this in any specialty store).
• If you like, garnish with a little chopped parsley for color.
