Kahlua® Chocolate Mousse

Ingredients for Kahlua® Chocolate Mousse
10 oz Bittersweet Chocolate
¼ cup Honey
4 each Egg Yolk
4 tbsp Kahlua®
2 cups Heavy Cream
Method for Kahlua® Chocolate Mousse
• Melt chocolate gently over a double boil.
• Begin whipping the egg yolks to a ribbon stage.
• In a small sauce pot, heat the honey to 230º.
• Slowly add the honey to the whipped yolks.
• Continue to run the mixer until the yolks have cooled.
• Stir in the Kahlua®.
• Whip the heavy cream to soft peaks.
• Fold the warm chocolate into the yolks.
• Fold the whipped cream into the chocolate and yolk mixture.
• Fill chosen vessel with mousse. We use plastic strips to hold the shape until the mousse sets up.
• Refrigerate.
• Serve with fresh unsweetened whipped cream, fresh mint, and pecan brittle.
