Tomato Jam

Appetizers

INGREDIENTS:

15 skinned tomatoes
2 julienne onions
2 c. tomato puree
3 Tbsp truffle honey
½ Tbsp cayenne
Salt (to taste)

METHOD:

Skin tomatoes. Boil and shock
Sauté tomatoes, onions, and render down
Puree the mixture in the blender with tomato puree
Add the last 3 ingredients (to taste)
