Aaron Deal knows that the details of a perfect meal, delicious though it may be in the moment, quickly fade out of memory. He also knows that the intangible feeling that comes from an impeccable balance of ambiance, service, food and wine can remain with a diner long after the exact menu has been forgotten. That’s why Chef Deal works tirelessly to strike that precise balance day after day as he guides the kitchen of Tristan.

Deal, 26, brings a confident, adventurous approach to his role as executive chef. He has essentially banned from his kitchen anything pre-made, frozen or even slightly out-of-season. He regularly explores his passion for local ingredients and tries to, “make them intriguing and adventurous, without being arrogant or pretentious,” he says. To that end, Deal enjoys pairing familiar techniques with unique ingredients. The effects are stunning. Witness Red Miso in a Classical Braise; Meyer Lemon Curd with Lamb; Sweetbreads married with Teriyaki sauce. His is a global exploration, presented in aromatic and colorful combinations.

And it is clearly working. After just four months with Deal at the helm, Tristan was awarded 4-and-a-half stars by the Post and Courier’s restaurant critic, who wrote: “Chef Deal has combined the art of cooking with the joy of food.” Charleston magazine’s May 2008 review opined that entrusting the kitchen to the still-young Deal was “a brilliant move,” and proceeded to enthuse that Tristan is a place “where exquisite food matches the beauty of the surroundings.” Under his leadership, the AAA Four-Diamond restaurant has gained the attention of discriminating food writers at Bon Appetit, Delta Sky, USA Today, Food Arts, Women’s Health, Epicurious.com, Organic Spa, the National Culinary Review and numerous others.

Prior to arriving at Tristan as chef de cuisine, Deal apprenticed in numerous kitchens and took university-level business classes before he answered the call to culinary school. Applying his still-intense focus to his studies, he graduated Summa Cum Laude from Johnson & Wales.

A skillful presenter, Deal was one of a very select group invited to give a culinary demonstration at the 2008 National Restaurant Show in Chicago. He won two cooking competitions at the 2008 Charleston Food and Wine Festival. In January 2008, he served as lead chef for a group-created dinner at the James Beard House. Deal has contributed to numerous charitable causes including the Lowcountry Foodbank Kids Café, the Charleston Fine Arts Dealers Association and others.
