Chef Eddie Moran
Eddie Moran brings an impressive array of experience to MERCATO Italian Restaurant in Charleston, SC by applying his cooking know-how from some of the finest kitchens in the country. Moran’s culinary career began on the West Coast where he spent eight years at some of the most prestigious restaurants in California including Bouchée, Cantinetta Luca and Aubergine at L’Auberge Carmel, a Relais & Chateaux property.
All three restaurants are considered among the best in the Monterey peninsula. Upon graduating from the California Culinary Academy in San Francisco in 2002, Moran held chef positions at established hotel properties in the Bay Area including Hotel Vitale and the Four Seasons San Francisco. Moran also worked as a chef at Jardinière, a gourmet restaurant located in the city’s chic Hayes Valley neighborhood.
Moran has crafted an original menu for Mercato that will maintain the restaurant’s reputation for serving delicious and artfully-prepared classic Italian cuisine with regional influences. He will also continue the tradition of incorporating local sustainable products to infuse Low Country influences into the menu.
