Chef Michael Mancias
Chef Michael Mancias is originally from West Texas and started his cooking career in that area. In 1999 he moved to San Antonio to attend a local culinary arts program to gain additional professional training in his chosen field. Following completion of that program, Chef Mancias has been a key player of the Reggiano's team since the restaurant opened. Starting out as an apprentice under renowned Chef Miguel Ardid, Chef Mancias mastered every station in the kitchen en route to becoming Reggiano's Executive Chef. His extensive research in the culinary arts includes extensive travels in the U.S. and well as in the Caribbean and Mexico in search of exciting new recipes and ideas. Later this year he will travel to Italy to develop ideas to enhance the items currently featured on his menu, as well as getting hands-on experience with new and exquisite Italian recipes. In addition to recent changes to the menu, Chef Mancias and his team are now open for lunch at Reggiano's where the noon menu includes offerings that feature the freshest seasonal ingredients – as well as a few favorites from the dinner menu. Chef Mancias's skill and expertise have been featured in articles in Texas Monthly, and feature appearances on Living, and Good Day SA. Chef Mancias has also won several local culinary competitions, and his creations are frequently featured at charitable events throughout South Texas. In addition to working alongside Chef Zarela Martinez of NYC at San Antonio's Arts & Eats Festival 2003, Chef Mancias has taught cooking classes at HEB's Central Market, and is a frequent guest instructor at the Williams and Sonoma store in San Antonio. For almost a decade, Chef Mancias has honed his skills in the kitchen, and is now devoting those considerable talents and ability to developing new dishes that are featured daily at Reggiano's.
