Executive Chef Dwayne Gale
Chef Dwayne Gale is the Head Executive Chef of Chart House at Tower of the Americas. Dwayne joined the Landry’s team in 2002 and originally served as senior kitchen manager of the Downtown Aquarium in Houston, Texas. During his tenure there, he assisted in planning and catering the Major League Baseball All Star Gala and the Super Bowl Gala, both events which were held at the Downtown Aquarium, along with the Texas Lone Star Rally in Galveston, Texas.
Prior to Landry’s Restaurants, Inc, he began his career working as a kitchen manager, eventually owning and operating his own catering business and a small Cajun restaurant, New Orleans Cajun Kitchen.
Dwayne was born and raised in Houston, and gained his inspiration to pursue a career in the culinary arts from his family, particularly his mother. She instilled a passion in him for cooking after spending years together in the kitchen sharing recipes. As the Chef for Chart House, Dwayne strives to take both the restaurant and San Antonio to a new culinary level. Specializing in fresh fish and seafood, plus imaginative sauces, Dwayne uses his expertise creating sensational Texas fare, mixing top-notch steak offerings with creative daily specials and distinctive dishes. Some of the Chart House signature dishes include Spicy Maple-Glazed Wharton County Quail, Shrimp Fresca, a signature dish featuring parmesan-dusted shrimp with angel hair in a zesty pomodoro sauce, and the Chart House souffle, unbelievably light and fluffy.
