Chef Mary & Brian West
Whenever someone asks me why I married Brian, I tell them it was because he made me laugh when all the ohter boys made me cry. I'm not saying it has always been a fairy tale between us, but it has been a fun ride. I met Brian when I was in college. He began his tireless experience as a restaurateur working as a busboy at a Steak House where I waited tables. The first time I saw him I thought, 'what a cute little busboy'. He was only 19 years old and had no idea what he wanted to be when he grew up. We started dating when he was 20 and by the time he was 24, he had tried out a number of potential occupations, including professional bartender, dog trainer, garage door opener installer and comedian. When he told me he was serious about becoming a chef, I was a bit surprised. Like most men, he loved to grill, but he never talked about cooking or even showed any fascination towards it, except for the time he saw my niece bake a cake in her easy-bake-oven. So we got married, moved to Houston, Texas, and he started Culinary School. I had never seen Brian so dedicated. He was up by 5:00 am every morning drinking a cup of coffee and looking over his homework. He would be in class all day then work as a line cook at night until 11:00 pm. Because Brian is dyslexic, studying was always a difficult task for him, but his complete devotion and determination lead him to graduate top of his class with perfect attendance. Since then, he has worked in different restaurants, in San Antonio as a Banquet Chef, Catering Chef, Sous Chef, and Executive Chef. He's dabbled in a few different types of cuisines, but his heart and soul are in Latin andTexas cuisine. He has learned over the years to master the art of fusing the big and bold flavors of Texas with the rich and savory essences of all the Latin countries. He has worked year after year, missing countless weekend parties, weddings, anniversaries, and holidays so that others cold enjoy a dining out experience. All the sacrifices Brian has made have never been in vain. You see, one of the best gifts God gave my husband is his ability to focus on what he wants and the intelligence to know that in order to get it; he needs to have a plan. Brian's plan was to marry me (that was the easy part he had me at hello) and to be a Restaurateur who could share his artistic culinary offerings in his hometown of San Antonio. Cafe Mariposa in nine long hard years in the making and worth every second.
