Thad Crennen
The AAA Four-Diamond Omni San Antonio Hotel at the Colonnade is pleased to announce the appointment of Chef Thad Geoffrey Crennen as Food & Beverage Director and Executive Chef of Bolo's Restaurant, one of San Antonio's highest-rated restaurants, which features superb cuisine with a flair of European taste. Crennen will also lead Omni's exceptional catering for all business and social functions.

  With over 18 years of exemplary culinary experience, Crennen has been recognized with such awards as Hospitality Employee of the Month, First Place in Region for Marriott Recipe Contest, and twice received the Bill Tefel Award for Guest Satisfaction in Quality of Food.

??Crennen comes to Omni San Antonio from the San Antonio Hilton Airport Hotel. While there, he performed the duties of Executive Chef, overseeing the $3.2 million-dollar food and beverage operation.

??Educated at one of the world's premier culinary colleges, the Culinary Institute of America Greystone, in St. Helena, California, Crennen has mastered the art of many cooking techniques that promise to enhance the Texas Hill Country cuisine with European finesse that Bolos is highly praised for. Crennen's cooking techniques will also enrich the first-class cuisine provided to business and social functions held in the Omni San Antonio. "I am excited about taking on this position. I hope to apply my knowledge in culinary cuisine to help ensure that the Omni San Antonio remains one of the finest sources for superb food," said Crennen. Crennen's specialties include the tastes of Asia, Latin America, and the Mediterranean. Crennen is also highly skilled in ice, vegetable, and fruit carvings. His expertise and sensibility has been enhanced with travels to Spain and Argentine in gatherings with world known chef where culinary knowledge and techniques are exchanged.
