Ingredients for Shrimp in Coconut Sauce

1 lb peeled Shrimp 16-20 ct, to the lb
1 medium Onion, sliced thin
1 small Green Bell Pepper, sliced
1 small Red Bell Pepper, sliced
2 small Tomato, sliced
1 tsp of raw Garlic, chopped
¼ cup of Cilantro, chopped
3 tbsp of Olive Oil
1 cup of Coconut Milk
1 tbsp of Spanish Paprika
crushed Red Pepper, to taste
Salt & Pepper, to taste

Method for Shrimp in Coconut Sauce

• Sauté the shrimp with olive oil, adding garlic, onions, tomatoes, and bell peppers. Add salt, crushed red pepper, and paprika.
• Cook until the onions are transparent or soft. Finish by adding the coconut milk. Bring up to a simmer.
• Serve over steamed rice.
