Ingredients for Scallop Mousse in Phyllo Cups
1 box Phyllo Dough
1 stick Butter, melted
¼ cup Shallots, chopped
1 cup Cream
2 ½ lb Scallops
Salt & Pepper, to taste
Method for Scallop Mousse in Phyllo Cups
• Preheat the oven to 350º.
• Lay out one sheet of phyllo dough on a cutting board.
• With a pastry brush, apply the melted butter and then place the next layer of phyllo on top. Repeat this four times.
• Cut the layered phyllo into squares, placing the last butter side down in the muffin tins.
• Place them in the oven until lightly brown.
• For the mousse, place the shallots and scallops in a food processor.
• Puree until smooth while slowly adding the cream.
• Add salt and pepper to taste.
• Place the puree into the cups and re-bake until firm, checking them like a cup cake.
