Dominique Macquet Executive Chef/Owner
Chef Dominique was born about as far from New Orleans as you can get, on the tropical isle of Mauritius, a former French colony, in the Indian Ocean.
In 1996 John Mariani of esquire Magazine cited Macquet as one of the twelve chefs in the country "to keep your eye on," and it looks like he was right.
Macquet opened his namesake restaurant at the Maison Dupuy Hotel in the French Quarter of New Orleans in March 1997, and within only six months Dominique's was awarded the enviable Four Bean rating by the Times-Picayune restaurant critic, as well as the Award of Excellence for its wine list by Wine Spectator Magazine. Dominique's was named as one of the top twenty new restaurants in the United States by Esquire Magazine in 1997. Also in 1997 Macquet was named Chef of the year by New Orleans magazine. In 1998 Macquet was named a "Rising Star of American Cuisine" and one of "America's Hottest Young Chefs," by Wine Spectator. The January 1998 issue of Bon Appetit Magazine also named Dominique's as one of the seven best new restaurants in the nation.
Macquet's links to the world began during his culinary training and apprenticeship at the Elangeni Hotel in Durban, South Africa. Later stints included traveling around the world cooking for Cunard Cruise Lines aboard the Queen Elizabeth II, two years in London, and time spent in Asia before landing in California at the Four Seasons Hotel in Beverly hills. He was lured to New Orleans by The Bistro at Maison De Ville in 1995 which garnered an increase from a Three Bean to a Four Bean rating under his command.
Trained in classic French cooking and well-versed in California cuisine, Macquet has easily embraced the use of fresh ingredients to create dishes that blend the robust flavors of the West with the more subtle ones of the East (mastered while cooking in Asia). Incorporating the refined spices of his native island home imparts a distinctive taste to his dishes. Ten Speed press of Berkeley, California will be releasing Macquet's first cookbook in October 2000 titled, "Dominique's Fresh Flavors."
Macquet was honored in 1996, 1997 and 1999 with appearances at the James Beard Foundation in New York City. He participates in the annual Epcot International Food & Wine Festival. He also does regular guest chef stints for numerous charities, including March of Dimes in Seattle and New Orleans, Meals on Wheels in New Orleans, Share Our Strength in Sonoma Valley and New Orleans. Macquet has been featured on CNN and The Food Network.
