Anthony Spizale
Executive Chef

A native of New Orleans, raised in an average Italian family, Chef Spizale recalls the fond family memories of growing up with great foods and wines as an integral part of his life. He chose to pursue his career through the University of Delgado’s Culinary Program and excelled by graduating with honors. Chef Spizale joined the Rib Room’s Culinary Staff in 1990 and continued to build his resume with specialized classes and hands on training at every opportunity that was made available to him. Recently, he traveled to Italy to attend a special course on Tuscan cooking at Coltibono Vineyards Winery in Tuscany. He has enjoyed the privilege of working with and among the finest of New Orleans’ celebrity chefs, and most memorable has enjoyed his stint as “Right Hand Man” in the kitchen of the Rib Room where Chef Jean-Louis Paladin served as a special guest chef of the Rib Room. Chef Spizale has combined his special culinary talents, coupled with his Italian heritage and the Creole culture of the great city of New Orleans into a delicate and savory dedication to his profession, and his rewards have been great. Chef Spizale has enjoyed excellent recognition as a young chef, being name Executive Chef of the Year for the Omni Hotels Corporation, “Best of Savory” in the Southern Comfort Cook-Off, and was named one of five “Top Chefs to Watch” by Louisiana Cookin' Magazine. Chef Spizale serves as the host chef for the New Orleans Wine and Food Experience and in June of 2004, he was one of several featured chefs for a James Beard Centennial Dinner held in New Orleans. Chef Spizale has also had the special honor to have traveled to several Omni Hotel properties in Cancun, Mexico and San Antonio, Texas for the purpose of educating the individual hotel’s culinary staff in the art of New Orleans cuisine. Among the many talents and skills inside the four corners of this Chef’s culinary armory, there is one that excels far greater than the rest, and that is his loyalty and belief in his ability to perform his duties as the Executive Chef of the Omni Royal Orleans. With only one glimpse of him working the dining room floor, we think you will definitely agree.
