Chuck Surba Executive Chef
Executive Chef/Proprietor Chuck Subra, Jr. at La Cote Brasserie , was raised in New Iberia, Louisiana with a passion for Cajun cuisine, a love of his grandmother’s cooking, and an appreciation of the abundant seafood available in Louisiana and the Gulf of Mexico.
Subra obtained a Diploma in Culinary Arts in New Orleans, and continued honing his skills at some of the city’s top restaurants, including Versailles, and later, under the tutelage of French Master Chef René Bajeux, at the esteemed Windsor Court Grill -once the only Mobil Five Star and American Automobile Association Five Diamond restaurant in the city.
