Chef Matthew Wilcoxson

Matthew was born and raised in and around Louisville Ky. Graduated from Oldham County High School and originally attended the University of Louisville studying Business and Spanish language before enrolling in Culinary school at Jefferson Community and Technical College.

Matthew worked in various restaurants around Louisville in both front and back of the house. Although he has always enjoyed cooking, he cannot pin point a pivotal moment in his life that drove him to taking it up as a career. Matthew joined the culinary team at Captain’s Quarters the summer of 2006 and quickly rose through the ranks until he was promoted to Sous Chef in early 2008. After logging time as Sous Chef at Captain’s Quarters he accepted a job as Sous Chef at the world renowned and historic Brown Hotel in downtown Louisville. As Chef of restaurants for both outlets in the hotel Matthew ended his year and a half jaunt at the Brown heading the kitchen of the AAA Four Diamond English Grill.

Matthew has just very recently returned to Captain’s Quarters to head the culinary department. He has a lot of excitement and anticipation for the coming year and hopes to make major improvements to both the restaurant and catering operations at Captain’s Quarters and on the CQ Princess.
