Toni's training does not come in the form of any formal, training, but instead comes in the form of hands on, front of the line experience over a span of 23 years. Toni always loved to spend all of his free time in the kitchen with his father. He knew from a young age exactly where he wished to spend his working years...in the kitchen creating unique dishes. His passion has always revolved completely around food; learning about food, reading about food, watching TV programs about food and experimenting with food. Food is his heart and soul and consumes every waking moment of his day. Toni has created a unique, flavorful menu at Giovanni's which reflects his desire to use traditional Italian ingredients and give them a modern twist.
