Chef Greg Hardesty
Greg graduated from Indiana University in 1991. His first job was at the Glass Chimney in Indianapolis Indiana. Here he was exposed to many of the classics in continental cuisine. This solid foundation is still evident in his cooking today. In 1995 he moved to Los Angeles where he expanded his learning under Chef Joachim Splichal and his growing Patina/Pinot restaurant group. He was made sous chef and helped open Splichal’s third Pinot restaurant in Hollywood. It was during this time that Greg was introduced to the light and simple flavors of Splichal's cuisine, and the importance of fresh, seasonal ingredients. The next stop for Greg was Rubicon in San Francisco, famous for its emphasis on wine and food. As sous chef he learned the importance of a well paired wine with properly executed food. He also discovered the bounty of the Bay area's organic produce, helping to further create a style that is simple yet sophisticated.M

In 2000 Greg returned to Indianapolis and opened H2O Sushi Bar, where he created food using classical sushi techniques from a contemporary California/French perspective. His second restaurant, Elements, was opened in September of 2003. It features modern American food that marries many of the influences of the Mediterranean Europe with the simplicity and clean lines of Japanese cuisine. Elements was Named restaurant of the year by Indianapolis Monthly in its first year. H2O Sushi was sold in 2005 to allow Greg to concentrate his efforts on Elements and his two young daughters, Juliet and Gloria.
