Chef de Cuisine Charles Kaiser
Chef de Cuisine Charles Kaiser brings an excellence and passion to Danielli Restaurant and Art Gallery, which is expressed in his eclectic European entrees. After 30 years in the industry, he has found a home at the Canterbury Hotel’s Danielli Restaurant and Art Gallery. Kaiser is excited to showcase his culinary skills and ingenuity to a Four-Star, Four-Diamond restaurant and a preferred hotel and resort property.
Kaiser was born in Tokyo, Japan, but raised in the United States. His culinary life began in his early 20s when he was offered a job at a restaurant where the owners would assist in paying for his college education. After Kaiser received his Restaurant and Hotel Administration degree from Purdue, he realized there was more to food than steak and potatoes. He took a lower-level position in an upscale Fort Wayne restaurant, Hartley’s, to expand his repertoire of entrees. This career move served as a spring board for Kaiser, leading to his stature today as a fine cuisine chef.
Along his 30-year career, Kaiser made stops as Chef or Corporate Chef at many Fort Wayne establishments and a highly esteemed out of state club. He has worked at Hall’s, The Factory, Hartley’s, Chappell’s Corner Grill, Bill’s Bistro, Paula’s Seafood, Summit Club, Joseph Decuis, and Northwoods Country Club, Dallas, Texas. Kaiser has also studied under some amazing chefs who assisted in forming and molding his creativity, style and taste. They include David Burke, Christian Frappier, Fulvia Sensani, and Leah Chase.
Kaiser brings to downtown Indianapolis a drive to be number one in quality, service, and uniqueness. He desires every diner to leave with an experience and not just a satisfied pallate. Kaiser resides in Indianapolis with his wife, Lisa, who also is a chef, and their two daughters, Isabella and Anna Kristina.
