Executive Chef Michael Vlasich
Chef Michael R. Vlasich’s plate has been full since he became the executive chef at the Indianapolis Downtown Marriott in May 2001. The award-winning chef oversees the two restaurants located inside the hotel, Circle City Bar & Grille and Champions Sports Bar, as well as all Marriott banquet facilities.
Chef Vlasich places an extreme amount of importance on food design and styling. He also feels that it is important to offer a wide variety of food to appeal to guests visiting from all over the world.
Since the hotel’s restaurants have opened, chef Vlasich has made it a priority to hire culinary students from around the country to work in his kitchens. Culinary students bring a diversity, enthusiasm and dedication to performance to their jobs that is rarely seen by employees who are not on the culinary career track.
In turn, chef Vlasich has inspired Hoosiers with his ability to stay ahead of the culinary trends and create cutting-edge choices in American Grille Bistro cuisine from the latest products. Recently, chef Vlasich has focused on stimulating fusion cooking to produce palate-quenching results, such as mustard-crusted Ahi tuna served with rock shrimp, cucumber and avocado Napoleon drizzled with sesame-ginger soy glaze, mushroom bisque soup with Boursin cheese dumplings and asparagus tips served in a Romano cheese pastry crust.
“As the public has become more educated with increased travel and exposure to the Internet, their expectations and demands increase and we as culinarians need to stay on top,” says Vlasich.
On an average day, Vlasich cooks for more than 2,000 people. He has also cooked for many high-profile individuals, including three former United States presidents and celebrities as diverse as golfer Greg Norman, actor Anthony Hopkins and rocker David Lee Roth.
“I’ve cooked for athletes, movie stars, and political dignitaries in my career,” he said. “But regardless of who I’m cooking for, my favorite part of the job is pleasing people’s palates with food.”
At a Glance
Vlasich spent six years at the PGA National Resort and Spa in Palm Beach Gardens, Fla., and garnered many awards for his culinary expertise, including:
• The 1998 Chef of the Year Award from the American Culinary Federation Palm Beach County Chapter.
• In 1998, Vlasich was inducted into the American Academy of Chefs, of which there are only 600 members worldwide.
• The 1997 Culinarian of
the Year Award from the American Culinary Federation Palm Beach County Chapter.
• The 1994 Chef of the
Year Award by the
National Executive Chefs
Association, as well as
many other honors.
• Chef Vlasich is a 1983 graduate of the Culinary Institute of America, Hyde Park, N.Y., and a Certified Executive Chef by the American Culinary Federation.
