Executive Chef Carl Huckaby
Chef Huckaby is a Certified Executive Chef, a Certified Culinary Educator, a Certified Executive Pastry Chef, a member of the American Academy of Chefs and a Food Management Professional. He was the 1996 National Chef of the Year for the American Culinary Federation and in 2006 he was inducted into the Indiana Restaurant & Hospitality Association Hall of Fame.

Carl is the Executive Chef and owner of Chez Jean Restaurant Francais which has been in operation since 1957 and Chez Jean Bakery & Deli which he opened in the fall of 2004.

Carl’s career as a food service professional began after high school. He has owned several bakeries and restaurants since. He is a graduate of the United States Army Club Management School, where he also taught for seven years both in the U.S. and Europe, and the United State Army Executive School at Florida International University. Carl is a qualified Serve Safe instructor and was sent to Hawaii to teach the food pantries safe food practices.

In 1995-96 Carl represented Indiana in Washington D.C. at the Childhood Hunger Day activities for the American Culinary Federation, where he also served as National Chairman for the Chef & Child Foundation. In 1993 he was privileged to participate in the World Assoc. of Cooks Societies World Cooks Tour for Hunger in South Africa. He has been recognized by the Indiana Beef Cattle Assoc. as a “Friend of the Industry” and by the Franklin Indiana Chamber of Commerce as “Man of the Year” in 1995.

Carl has been a corporate chef for PACE Foods traveling nationally promoting PACE Picante Sauce, as well as, for General Foods promoting Jello. He has also been a Celebrity Chef for the National Pork Producers Association.
