Executive Chef Paul Jones

Chef Paul Jones developed a passion for cooking at a young age. As a teenager, Jones worked as a cook in a small Greensboro, North Carolina restaurant. Here he watched a chef delicately prepare a piece of salmon and became fascinated by the creativity that went into a single dish. In 1975 Jones began his career as a Sous Chef for Winston Caterers in Greensboro. Here he worked his craft before he was offered a job with a restaurant chain named Alfredo’s of Rome. He stayed with this company for several years and worked at locations in North Carolina, New York, Philadelphia, and Orlando. While working for Alfredo’s, Jones developed a love for cooking Italian food, which he now considers one of his specialties. Finally, in 1986 he began his career with Hyatt at Grand Cypress in Orlando, Florida. Ten years later Jones accepted his first job as Executive Chef for the Hyatt Regency Knoxville. He then transferred to the Hyatt Regency Milwaukee before landing at the Hyatt Regency Indianapolis in 2000. In Indianapolis Jones oversees Eagle’s Nest restaurant, One South restaurant (opening in 2007), Level One bar (opening in 2007), and all the banquet food preparation. He says the diversity of food found in this midwestern city makes it a unique and special place for him to continue to expand his talents.
