| Blue Cheese Macaroni |

| Ingredients |
1 box macaroni noodle, cooked al dente
1 red onion, diced and sautéed
1 red bell pepper, diced and sautéed
2 portabella mushrooms, sliced and sautéed
2 C spinach
salt and pepper

| Ingredients Blue Cheese Sauce |
1 yellow onion, sliced
7 garlic cloves, sliced
2 C white wine
3 sprigs thyme
3 C heavy cream
12 oz your favorite blue cheese, crumbled up

| Method |
| Sautée onion, bell pepper, and mushrooms together, add noodles and
spinach.
Finish with the blue cheese sauce. You may not need all the sauce.
(It can be hot or cold) |
| Method Blue Cheese Sauce |
| In a sauce pot, add oil and garlic, tan the garlic then add the onion
and cook on low heat.
Add the white wine and cook down 50%.
Add the cream and thyme.
Simmer on low for 30-45 minutes.
Strain out vegetables.
In a blender, purée sauce with bleu cheese chunks.
Your sauce is done! |
| Note |
| Do not use a cheap bleu cheese, because you can taste the difference
in the sauce. |
