PEEKY TOE CRAB SAUSAGE
Ingredients
1/2 lb Peeled and Deveined Shrimp
1 lb Peeky Toe Crabmeat
4 oz Minced fFnnel
4 T Heavy Whipping Cream 40 %
1 T Chopped Garlic
2 each Egg Whites
2 T Chopped Flat Leaf Parsley
Bunch of Green Onions minced
To taste Salt
To taste Ground Black Pepper
Method
  • Puree shrimp in a food processor until smooth.
  • Blend in egg whites, heavy whipping cream, and green onions while still in the food processor.
  • Fold in Peeky toe crabmeat, minced fennel, garlic, and chopped flat leaf parsley.
  • Then season with salt and ground black pepper.
  • Scoop and form into 15- 2 oz. patties.
  • In a medium hot sauté pan, add 2 oz. of vegetable oil.
  • Season the Peeky toe crab sausage patties with salt and black pepper to taste and pan fry 2 minutes on one side, flip and then 2 1/2 - 3 minutes on the second side.
