| PEEKY TOE CRAB SAUSAGE |

| Ingredients |
1/2 lb Peeled and Deveined Shrimp
1 lb Peeky Toe Crabmeat
4 oz Minced fFnnel
4 T Heavy Whipping Cream 40 %
1 T Chopped Garlic
2 each Egg Whites
2 T Chopped Flat Leaf Parsley
Bunch of Green Onions minced
To taste Salt
To taste Ground Black Pepper

| Method |
| Puree shrimp in a food processor until smooth.
Blend in egg whites, heavy whipping cream, and green onions
while still in the food processor.
Fold in Peeky toe crabmeat, minced fennel, garlic, and
chopped flat leaf parsley.
Then season with salt and ground black pepper.
Scoop and form into 15- 2 oz. patties.
In a medium hot sauté pan, add 2 oz. of vegetable oil.
Season the Peeky toe crab sausage patties with salt and black
pepper to taste and pan fry 2 minutes on one side, flip and
then 2 1/2 - 3 minutes on the second side. |
