COCHINITA PIBIL
INGREDIENTS:
2 Boneless Pork Leg
7 oz Achiote Seasoning
4 c Julienne Red Onions
3 oz Salt
1 c Fresh Orange Juice
1 c Tomato Sauce
METHOD FOR THE SEASONING:
  • Blend all fluids and dissolve the achiote.
  • Mix with the rest of ingredients and pour into the pork meat.
  • Make sure it is all blended.
  • Cover the meat with banana leaf and seal the pan with foil.
  • Bake at 350 degrees for one hour.
  • Lower temperature to 180 degrees and continue baking for 45 minutes or until done.
  • METHOD:
  • Trim all fat from pork, cubed in 2”x2”.
  • Place on roast pan.
