| INGREDIENTS: |
2 Boneless Pork Leg
7 oz Achiote Seasoning
4 c Julienne Red Onions
3 oz Salt
1 c Fresh Orange Juice
1 c Tomato Sauce

| METHOD FOR THE SEASONING: |
| Blend all fluids and dissolve the achiote.
Mix with the rest of ingredients and pour into the pork
meat.
Make sure it is all blended.
Cover the meat with banana leaf and seal the pan with foil.
Bake at 350 degrees for one hour.
Lower temperature to 180 degrees and continue baking
for 45 minutes or until done. |
| METHOD: |
| Trim all fat from pork, cubed in 2”x2”.
Place on roast pan. |
