Sake-Steamed Seafood Medley
Yields: 1 serving
INGREDIENTS
3 scallops (cut each in half to make 6 pieces)
3 Pakalolo shrimp
5 mussels
2 oz edamame beans
1 roma tomato, chopped
1 pinch ea garlic, ginger, and shallots
1 pinch cilantro, chopped
1 pinch parsley, chopped
1 T butter
1 oz sake
1 drizzle olive oil
salt and pepper
TO FINISH
  • Arrange with mussels on the bottom, topped with scallops and shrimp. Drizzle with olive oil.
  • METHOD
  • Heat sauté pan.
  • Season seafood with salt and pepper.
  • Place butter in pan with garlic, ginger, shallots and tomatoes. Toss to mix.
  • Add seafood, edamame, cilantro and parsley. Toss to combine then cook for 1 minute until pan becomes hot again.
  • Add sake and cover with another pan.
  • Let steam for 2-3 minutes until seafood is cooked and liquid has reduced. Squeeze a little lemon juice.
  • Season, toss and remove to bowl.
