| Sake-Steamed Seafood Medley |

| INGREDIENTS |
3 scallops (cut each in half to make 6 pieces)
3 Pakalolo shrimp
5 mussels
2 oz edamame beans
1 roma tomato, chopped
1 pinch ea garlic, ginger, and shallots
1 pinch cilantro, chopped
1 pinch parsley, chopped
1 T butter
1 oz sake
1 drizzle olive oil
salt and pepper

| TO FINISH |
| Arrange with mussels on the bottom, topped with scallops and
shrimp. Drizzle with olive oil. |
| METHOD |
| Heat sauté pan.
Season seafood with salt and pepper.
Place butter in pan with garlic, ginger, shallots and tomatoes.
Toss to mix.
Add seafood, edamame, cilantro and parsley. Toss to combine then
cook for 1 minute until pan becomes hot again.
Add sake and cover with another pan.
Let steam for 2-3 minutes until seafood is cooked and liquid has
reduced. Squeeze a little lemon juice.
Season, toss and remove to bowl. |
