| Homemade Primavera |

| Ingredients for Homemade Primavera |
6 yellow squash
6 zucchini
2 large yellow onions
2 C garlic, chopped
2 C basil, chopped
2 C Italian parsley, chopped
2 #10 cans bell orto tomato strips
1/2 #10 can tomato sauce
3/4 gal chicken stalk
1/2 gal veggie stalk
3 C white wine
1/2 C oregano, dried
to taste salt and pepper |

| Method for Homemade Primavera |
• In a large stalk pot with oil and a pinch of salt and pepper, sautée
chopped garlic until lightly browned then deglaze with one cup of the
white wine.
• Add in the squash, onions and a pinch of salt and pepper and sautée
until blanched then deglaze with one cup of white wine.
• Add in the chopped basil and parsley and cook until the basil starts
to pop, then add in the last cup of white wine and let simmer.
• Finally add in the tomato strips, tomato sauce, both stalks and the
dried oregano, stir well and let simmer for three hours. |
