| INGREDIENTS |
10 oz fresh ahi tuna
3 T roasted red bell pepper
1 avocado
2 T green onions
1 T chili garlic sauce (available in Asian markets)
1 T lite soy sauce
dash salt and pepper
1 C ranch dressing
1/4 C of Dijon mustard sauce (see below for instructions)
10 crispy wontons and cilantro for garnish

| INGREDIENTS: DIJON MUSTARD SAUCE |
1/4 C Dijon mustard
1 T chopped capers
1 T diced tomatoes
1 T champagne
1 T basil
dash salt and pepper

| METHOD |
| Dice the ahi and put in a bowl to combine green onions, chili garlic.
sauce, soy sauce, salt and pepper; toss with the ahi.
For the sauce, combine the ranch dressing with the Dijon mustard sauce. |
| METHOD: DIJON MUSTARD SAUCE |
| Combine and mix well all ingredients. |
| TO FINISH |
| Put a round mold in the center of the plate, put the ahi mixture in the
mold, then dice the red bell pepper and diced avocado and place on
top of the ahi mixture in the mold. Pour the sauce around the mold on
the plate and place the crispy wontons as desired. |
