10 OZ SEMI SWEET CHOCOLATE
8 OZ BUTTER
Method:
PLACE IN HEAVY SAUCE PAN OVER LOW HEAT TO ALLOW ALL TO MELT TOGETHER
Ingredients:
8 EA EGG YOLKS 9 OZ SUGAR ½ VANILLA BEAN
½ ORANGE-ZESTED
1 TABLESPOON CINNAMON
Method:
COMBINE SUGAR AND YOLKS IN MIXER. ADD THE VANILLA BEAN, ORANGE AND CINNAMON.

16 OZ HEAVY CREAM
4 OZ POWDER SUGAR
Method:
COMBINE IN MIXER WITH WHIP OVER MEDIUM SPEED UNTIL YOU SEE SOFT PEAKS.

COMBINE ALL INGREDIENTS IN LARGE MIXING BOWL AND MIX BY HAND WITH A FLAT SPATULA. RESERVE FOR ASSEMBLY

2 OZ SUGAR
Method:
SLICE BANANAS WITH SUGAR PLACE INTO 400 DEGREE OVEN TO “CANDY” THE BANANAS- 15-20 MINUTES RESERVE FOR ASSEMBLY
