| BLACK BEAN CHILI |

| Ingredients |
2 T Olive Oil
1 c Yellow Onion, chopped
1 each Fresh Jalapeno Pepper, seed and diced
1 T Garlic, minced
1 c Black Beans, soaked overnight
1 c Chicken Stock
1 each Fresh Lime
To taste Salt & Pepper
1/2 t each Oregano & Thyme
2 t each Chili Powder & Cumin
1/4 c Fresh Cilantro 1/4 cup
1 T Butter

| Method |
| Put the oil in a saucepan over medium heat.
Add the onions and cook until softened.
Add the jalepeno, garlic and beans.
Season with salt, pepper, oregano and thyme.
Stir in the stock, lime juice and season with chili powder
and cumin.
Cook for 20 minutes.
Stir in cilantro and butter.
Serve warm with white rice or over top of pan seared or,
grilled fish. |
