| MARINATED UNI AND YELLOW FIN TUNA WITH FAVA BEAN AND GRAPE SALAD |

| Ingredients |
8 oz yellow fin tuna, diced small
4 uni tongues (fresh)
4 oz fava beans, blanched and shelled
4 oz grapes, sliced
to taste olive oil

| Ingredients Miso Vinaigrette |
2 oz miso
1 t soy sauce
1 C soy oil
juice of one lime
to taste salt and pepper

| Method |
| Toss yellow fin tuna and uni with olive oil, salt and pepper, lime juice,
fava beans and grapes in a bowl.
Place miso vinaigrette in a small pool on the bottom of the plate,
place on top the tuna and uni tongue mix, garnish with grilled piece
of bread. |

| Blend all until emulsified. |
