| STEAK AU POIVRE |

| Ingredients |
2 8 oz Filet Mignon Steaks
2 T Black Peppercorns
1 T Butter
1 T Olive Oil or Vegetable Oil
1/4 c Heavy Cream
1 oz Cognac

| Method |
| Crush peppercorn between two sheets of wax paper.
Coat filets on both sides with crushed pepper.
Over medium heat, melt butter and add oil to an iron skillet.
When hot but not smoking, place filets in pan and cook for
four minutes on each side.
Remove filets, pour liquid from the pan leaving bits in the pan.
Add cream and Cognac to the pan and bring to a boil.
Deglaze the pan with a wooden spoon by stirring the
boiling mixture as the sauce reduces or thickens.
This will only take about two minutes.
Pour sauce over steaks and serve.
For more done steaks,move them from the pan to a preheated
oven for the duration of time that the sauce is being prepared. |
