| Sweet Potato Soup With Roasted Curry Chicken |

| Ingredients For Chicken |
4 Boneless Chicken Breast
1 C Olive Oil
4 Cloves Minced Garlic
1/4 C Balsamic Vinegar
Pinch Dry Thyme
1 t Dijon |

| Ingredients For Soup |
5 Large Sweet Potatoes, peel and dice
2 oz Chicken Broth
1 C Heavy Cream
1/4 C Olive Oil
4 Cloves Minced Garlic
1 Large Yellow Onion, diced
1/4 t Nutmeg
1/4 t Cinnamon
1 t Brown Sugar
1/4 t Curry
To Taste Salt and Pepper |
| Method For Chicken |
| In food processor, blend vinegar, garlic, mustard, thyme and curry.
Drizzle in oil.
Place vinaigrette in bowl with chicken and marinate for 30 minutes.
Place on roasting pan, cook at 350 degrees for 20 minutes.
Cool and set aside. |
| Method For Soup |
| Sauté onions, garlic and olive oil until tender.
Add sweet potatoes and chicken broth.
Cook until potatoes become soft.
Using a wire whisk, whip potatoes until they are smooth.
Add cream, nutmeg, cinnamon, brown sugar and curry.
Continue to whip until soup is creamy.
Dice chicken and add to soup then serve. |
