| Yields: 8 - 10 servings |

3 sticks unsalted butter, softened
18 oz semi-sweet chocolate chips
3/4 C amaretto
1/3 C powdered sugar
4 eggs, separated, or equivalent egg product
dash cream of tartar
12 oz toasted, ground almonds
12 shortbread cookies
whipped cream

| Method |
| Line a single loaf pan with clear wrap. Set side.
Melt 1 stick of butter over low heat. Remove from heat and
stir in chocolate chips until melted and smooth.
Cool to room temperature, then add amaretto.
Cream 2 sticks of butter. Slowly add powdered sugar, scraping down inside of bowl.
Add egg yolks, one at a time.
Beat in cooled chocolate mixture until completely combined
with yolk mixture.
Stir in almonds.
Whip egg whites with dash of cream of tartar until soft peaks form.
