| CRAB, SHRIMP AND SCALLOP LOLLIPOPS |
| Yields: 8 to 10 lollipops |

| Ingredients |
1 lb jumbo lump crab
1/2 lb cooked bay shrimp
1/2 lb cooked bay scallops
3/4 C mayo
1/4 C dijon mustard
2 eggs
2 green onions, fine chopped
1 C panko bread crumbs (for balls)
to taste salt and pepper
2 C panko bread crumbs (for coating)
8 to 10 lemon grass tips, approximately three inches long

| Method |
|
Mix all ingredients together in bowl.
Form into equal sized balls. A scoop works best.
Roll balls in bread crumbs.
Stick with lemon grass.
Deep fry for approximately two minutes at 325 degrees or until
golden brown. |
