| Ingredients |
2 Boneless Chicken Breasts
1 oz Deli Ham,Thinly Sliced
1-1/2 oz Ricotta Cheese
1 oz Mozzarella Cheese
4 oz Whipping Cream
2 oz Romano Cheese, Imported
Parsley
2 Eggs, Slightly Beaten, For Egg Wash
1 c Flour
1 c Breadcrumbs
Vegetable Oil

| Method |
| Pound out chicken breast, skin side up.
Put slice of ham on each piece, then put 1/4 to 1 ounce of
Ricotta over ham, and sprinkle shredded Mozzarella over
Ricotta.
Roll chicken breast; dredge in flour, eggwash, then roll in
breadcrumbs.
Fry rolled breast in pan until cooked well.
Make a light alfredo sauce.
Using a Teflon pan, heat whipping cream.
When cream starts to bubble, stir in Romano cheese
slowly, and let it reduce without burning.
To ensure chicken is done, place in microwave for 2 to 3
minutes.
Sprinkle parsley in Alfredo sauce and pour over chicken. |
