| Fetishes Maryland Style Crab Cakes |
| Yields: 3-4 servings |

| Ingredients |
1 lb can jumbo lump blue crab meat
1/2 C mayonnaise
1 t Tabasco
2 T Worchester
1 t dry mustard
1 T Old Bay Seasoning
1 egg yolk
1/2 C crushed unsalted Saltine crackers

| Method |

Mix together all ingredients, except the crabmeat and the cracker crumbs, thoroughly in large mixing bowl. When those 6 ingredients are completely mixed, add crabmeat and gently fold the lumps into the mixture so you do not break up the lumps of crab. Finally,
gently mix in the cracker crumbs in the same way so as not
to disturb the lumps.
Allow to sit in refrigerator for 2-3 hours so the cracker crumbs become soft and absorb some of the moisture.
Gently form mixture into 4 oz. Cakes. Sauté in clarified butter
and turn to golden brown on medium high heat for 3-5 minutes
on each side.
Traditionally served with just a splash of lemon juice or use your favorite seafood dipping sauce.
