8 oz Florida snapper
2 oz lemon sage sauce
|

| METHOD |
|
Coat snapper with dijon mustard and dust with seasoned flour.
Saute fish until golden brown and then finish in oven.
In the same pan, make the lemon sage sauce. |

2 t chives, diced
1 oz tomato concasse
2 t sage leaves, minced
2 T butter
