| NEW ENGLAND MUSSELS IN A GARLIC WINE SAUCE |

| Ingredients |
2 lbs fresh mussels, cleaned and de-bearded
4 T butter
1 oz minced garlic
1 oz minced shallots
2 oz white wine
2 oz clam juice
4 sprigs fresh parsley, chopped

| Method |
|
In a large sauce pan with lid, melt butter then lightly sauté
garlic and shallots.
Add mussels, white wine and clam juice. Cover and steam for about 8-10 minutes until mussels are open.
Serve in a large bowl, pour garlic wine sauce over the mussels and garnish with parsley. |
