Southwest Sirloin Steak
Yields: 4 servings
Ingredients
4 10 oz steaks
1 ea lime
1 T ancho chili powder
3/4 T corriander
2 cloves garlic
1 T olive oil
Chipotle Sauce
Ingredients
3 T olive oil
1/2 carrot, diced
1/2 celery stalk, diced
1/2 white onion, diced
1/2 tomato, diced
2 cloves garlic
3 T flour
1 ea bay leaf
1 t black peppercorns
1 qt beef stock
1 ea chipotle, pureed
5 T honey
2 ea limes
Method
  • Place steaks on shallow baking dish. Juice lime. Mix all ingredients in baking dish with steaks. Marinade for 1-3 hours and cook until desired doneness. Strain then ladle sauce over steaks. Garnish with a fresh lime on the side. Serve steaks with your favorite vegetables and roasted potatoes.

  • Method
  • In sauce pan, heat olive oil and sauté carrot, celery, onion, tomato, garlic and peppercorns until brown. Then add flour, bay leaf, beef stock and chipotle puree. Bring to boil then reduce heat to simmer. Reduce liquid by half until sauce coats the black of a spoon. Add honey and lime juice. Salt and pepper to taste.
